Business Building Bliss – 5 Ways to Start Your New Restaurant Off Right

If you have dreamt of starting a restaurant in all your spare time for the last few years, it may be the time to finally do it. If you find yourself eating out more than you eat at home, or cooking for others more than yourself, perhaps your true calling is fine food. If you want to take your food appreciation to the next level, read on to see how you can start off your new restaurant the right way. Ensure you have the right intentions Before you even think about starting a restaurant, ensure that you are opening a venue for the right reasons. It’s a hard fact, but many restaurant owners fail because they don’t love what they do, or they don’t want it enough. Opening a restaurant often requires physically hard work, late nights and constantly being on the clock. If you aren’t willing to give this commitment, it might be a good idea to think of another venture. If you live and breathe food, the next step is to think about the sort of theme you want to incorporate into your restaurant, as well as the furniture, fittings, layout and cuisine that’s going to be on offer.   Build a solid business plan As with any business venture, you need to create a solid business plan before you begin. This will set up your course for success and provide you with a timeline that can help you stay on top of your tasks and goals. Outline your competitors, your marketing strategy, your target audience, any relevant market research, as well as a solid budget projection that includes all fit out costs. If you need to check relevant prices of equipment you may need, Norris is a great wealth of knowledge. Select a luscious locale With any hospitality venue, your location is everything. You need to ensure your restaurant is in an area that sees a healthy amount of foot traffic, or that has the potential for growth. However, you of course need a location that fits within your budget, too. Naturally, the perfect spot can be hard to find, like a needle in a haystack – so take your time. Don’t rush into things. Whether you build from scratch or decide to rent a premises, the space you choose for your restaurant is one of the most important decision that you will make. Test your menu You should treat the menu on offer at your restaurant as a culinary weapon. It needs to be sharp, effective, unmatched and creative. Whatever theme you are employing with your restaurant, never scrimp on produce. Ensure that you are...

5 Ways to Create the Perfect Commercial Kitchen

“Cookery is a wholly unselfish art: All good cooks, like all great artists, must have an audience worth cooking for.” – Andre Simon If you are in the business of feeding people, your commercial kitchen can be likened to an artist’s den.  Full of creativity, energy and the tools to inspire masterpieces.  Setting up a functional, professional kitchen is not just about your equipment.  It is also about design – for functionality, safety and performance. So where does one begin such a huge project?  Let’s break down the components which go to making up the perfect commercial kitchen.   Equipment   Having the right equipment for the job is absolutely the premium requirement for anyone setting up a commercial kitchen.  Not only is this necessary for safety, it is also attracts professional staff and in the long run, quality equipment will save you money by it’s longevity.  Consider such mainstays as:   Norris dishwasher – a heavy duty commercial washer, built to last Waldorf commercial ranges Trueheat grill Solid stainless steel racks, benches and shelving – regular and mobile Commercial refrigerators and freezers   Stainless steel benches with splashbacks need to be purchased with your kitchen design in mind (see below). Depending on the style of food you’ll be preparing, you may also need to consider prep stations, sauté stations, barbeque grills, pizza ovens, bain maries, deep fryers and salad stations.   Cooking   Commercial cooking ranges must be designed for high volume usage.  Look for designs which are:   Able to be banked together with other ranges or equipment; Have a gas connection on the front or side to facilitate ‘banking’ Specially designed for heavy, high volume use; these will usually be manufactured using thicker gauges of metal and contain more welded components Boast a higher energy output per burner than a standard range.   Ensure you have implemented a suitable ventilation system including an industrial range hood and H-VAC (Heating Ventilation Air Conditioning) ventilation. Benchtop equipment such as fryers, tunnel toasters and food warmers need to be suitable for industrial use, easy to be cleaned and large enough to cater to high volume turnover. Storage When selecting a commercial refrigerator and freezer, the design of your kitchen needs to be considered.  How much space allowance do you have to accommodate them? Consider placement of doors for easy access. Another consideration depends on whether your requirements will be larger storage of food longer term (freezer) or short term refrigeration.  The impact of such considerations needs to be decided prior to any purchase of big ticket items such as your cold food storage. Design The layout of your kitchen...

Reasons why businesses are investing in food safety and quality.

The Australian Food and Safety information council is warning Australians about the risks with contracting food poisoning. Data from the Australian Bureau of Statistics showed that Australians were becoming more vulnerable to food poisoning, which is leading to unpleasant feelings with people’s health. Or worse, it is life threatening. With more than 5.4 million people affected in the last year, the Australian government is urging businesses to do more to combat the rise in dangerous bacteria that is leading to more reported cases of food poisoning. One of the themes in the Australian Food Safety Week which is due to commence in November, is ‘How you cook can make you crook!’. People can often be unaware of how their cooking methods may be unhygienic and lead to health problems for them and for others that they are serving. The aim is to improve the awareness of food safety for businesses. The Australian Food Safety Information Council recommends that you retain control of: How you clean the food. How you cook the food. How you chill the food. How you separate the food. What are some tips to better manage food safety and quality. If a person is sick, do not have them prepare, cook or serve food. If a person is ill, it is best for them to be removed from the environment where food is stored and prepared. Sick workers can spread their virus or disease to the people that are consuming the food. There are foodborne pathogens such as Norovirus, Hepatitis A and Shigella, which are often spread by restaurant workers to the restaurant’s customers through their foods. image via foodsafety.gov There was a case in the US where a restaurant worker was ill with Hepatitis A and exposed up to ten thousand restaurant patrons to the disease. Those that were not immediately vaccinated contracted the virus. Actions that business need to take when it comes to food safety when employees are sick is that the employee must be told to stay home and return only when they are fully recovered. While it may seem that the operations of your business are strained with a reduced labour force, it is a temporary setback compared to your restaurant being responsible for hundreds or thousands of cases of food poisoning that could lead to reputation damage, a reduction in new and return customers and potential legal action. Ensure that you store and chill food items properly. Any perishable items should be kept inside the fridge at 5 degrees Celsius or below. Perishable items oxidise when exposed to air and heat. To maintain freshness, invest in a vacuum sealer that...

Magnesium, the mighty mineral

Magnesium, the mighty mineral

In today’s day and age, it’s never been more important to take care of our health. We all know the health benefits of taking vitamin C and of taking vitamin D, and we know how beneficial it is for us to eat a healthy diet and to ensure that we get enough water, but what about the other, lesser known minerals that are still vital to our health? Do you know about the vast array of vitamins and minerals that you need to take in every day in order to keep your body functioning at an optimal level? There are a huge number of minerals and vitamins that are present in food, and unless you’re aware of them and working to consume the right amounts, you may miss out on something vital and potentially develop a deficit somewhere down the line. Magnesium is one of these vital minerals and while you mightn’t have jumped to the importance of it, it’s responsible for over 300 biochemical reactions in your body – although, worryingly, over 55% of Americans don’t get enough magnesium. Magnesium is a mineral that affects your nerves, the rhythm of your heart, your blood glucose, your immune system and your bone strength. You might think that you’re doing enough to take care of your bone health by taking natural osteoporosis supplements, but there are other things that you can do in order to ensure that you’re looking after your body. High up on the scale of looking after yourself is ensuring that you’re getting enough magnesium, because it can have a huge impact on your body if you don’t get enough. What’s the deal with magnesium? You would usually be able to get your recommended daily dose of magnesium from a varied diet that included a range of leafy greens, nuts, grains and seeds. Sadly, modern farming techniques have stripped the amount of magnesium that we’re getting from our food; where once before we got enough magnesium from our food, now modern food has fifty per cent less magnesium than before. In addition to this, many foods that we eat are made with refined flours instead of whole wheats, and so many of the natural nutrients (like magnesium) are now removed from our diets. Food manufacturers compensate for this by ‘enriching’ our food with things like iron and B4 vitamins, but this doesn’t replace the magnesium in our lives. How can we get enough magnesium? When you’re planning your diet, it can be helpful for you to ensure that you’re focusing on eating organic foods that are rich in natural minerals and vitamins. Eating over-processed food and non-organic...
